Fudgy Black Bean Peanut Butter Brownies

And these are actually vegan unlike some of the other things I posted thinking they were vegan… but it turns out animal parts are in all kinds of weird things you would never suspect.

Vegan Shepards Pie

Shepards Pie was my favorite dish when I was a kid. Now I’m always looking for new ways to make a vegetarian or vegan Shepards Pie that doesn’t suck. I’ve tried it with lentils, and with sweet potatoes, and they both turned out really good. This time I tried replacing the meat with Cauliflower.

I chopped the cauliflower up along with tomato, bell peppers, white onion, celery, and carrots. I tossed it all with extra virgin olive oil, Worcestershire sauce, and sprinkled with Montreal steak spice – in an attempt to give it some of the flavor the meat would have.
I spread it all on a baking sheet with tin foil and cooked it in the oven at 450 until it looked finished.
Once the mixture was cooked I poured the it into baking dishes. I couldn’t find my big one so I used two small dishes.

Then I topped the “meat” mixture with corn and mashed potatoes And baked it in the oven at 350.

I sprinkled Smoked Paprika on top. I made one with cheese and one without. Yes, this is real cheese… I tried to use vegan cheese before but it’s just too disgusting. I’d rather top my food with dirt.

They both turned out really good. I’ll definitely make this again. I think next time I’ll do a mix of cauliflower and lentils boiled in beef bouillon… I know that’s cheating but I think it will make it taste better.

Food I Made This Week

I love to cook so I figured I would share some of my creations with you guys.

Mini Pizza’s

I made these with garlic naan bread instead of traditional pizza crust , topped with tomato paste, chopped up tomato, spinach, green and black olives, slices of bell pepper and hearts of palm. Then topped with mozzarella (the kind that comes in a ball in water, not that Kraft shit) and sprinkled with salt, pepper, and basil. Then I put it in the oven at 350 until the cheese was melted and the bread was crispy. It was actually really good, better than I was expecting. I think next time I’ll top the whole thing off with some balsamic vinegar.
